Tortilla Pie

I came across a recipe similar to this online, but, in my typical fashion, didn't write it down, then tried to recreate it at home. The resulting dinner was surprisingly good!

Tortilla pie

4 flour tortillas
1 C refried beans (use a can of refried beans or make them yourself)
3/4 C salsa
1 1/2 C cooked taco meat (seasoned ground beef or chicken)
1 C shredded cheese
Optional: corn, chopped tomatoes

Place the first tortilla in a pie plate. Spread 1/3 C beans (I didn't have a can or refried beans OR a can of pinto beans to make some. I settled on mashed kidney beans. No one knew the difference.) on the tortilla, followed by 1/4 C salsa, 1/2 C meat, 1/3 of the vegetables (optional) and 1/3 C cheese. Top with another tortilla. Repeat twice more, ending with a tortilla on top of the "pie".
Bake at 350 for about 20 minutes, or until the top tortilla is crisp and the pie is heated through.
Slice into wedges to serve. Top with salsa or queso dip or enchilada sauce if desired. Serve with tortilla chips and queso dip.
Makes 3-4 servings.
