Make-ahead, One-dish Hashbrown casserole

Make-ahead, One-dish Hashbrown casserole

5-6 C shredded potatoes (enough to fill the 13x9 pan)
1/2 C margarine or butter, melted (one stick)
1 can Cream Of Chicken Soup
3 C cheddar cheese, grated
1/2 tsp pepper
1 tsp salt
Onion powder or Chopped onion, if desired

Combine all the ingredients in a 13x9 baking dish, and stir to mix up. (If making the night before this will be eaten, cover and refrigerate here) Bake at 350 for an hour, or until bubbly and browning on top. Turn the oven to Broil for a couple minutes to finish the browning.

Why I liked this:

  • Only got 1 pan dirty. I'd rather be visiting with family than doing dishes on Christmas.
  • I was able to assemble it Christmas Eve and pop it in the oven for brunch Christmas morning
  • It was yummy. I was afraid it would be way too wet, but ended up working out.
